Ingredients

  • 1 cup pearl barley
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 250 grams mushrooms, sliced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. Start by rinsing 1 cup of pearl barley under cold water and set aside.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 chopped onion and 2 minced garlic cloves, sautéing until translucent.
  4. Stir in 250 grams of sliced mushrooms and cook until they reduce in size.
  5. Add the rinsed barley, 4 cups of vegetable broth, 1 teaspoon of dried thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  6. Bring the stew to a boil, then reduce heat to low and simmer for 45 minutes, or until the barley is tender.
  7. Check the seasoning and adjust with additional herbs or salt if necessary.
