Ingredients

  • 200g chorizo sausage, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400g canned diced tomatoes
  • 400g canned white beans, drained and rinsed
  • 750ml vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh herbs and sliced tomatoes for garnish

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add diced chorizo and sauté until browned and crispy.
  2. Add chopped onions and minced garlic to the pot. Cook until onions are translucent.
  3. Stir in diced tomatoes, white beans, and vegetable broth. Bring the mixture to a simmer.
