Vegan Wild Rice & Chanterelle Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cups chanterelle mushrooms, chopped
  • 1 teaspoon dried thyme
  • 1 cup wild rice
  • 6 cups vegetable broth
  • 1 cup soaked cashews
  • 1/2 cup water
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 chopped onion and sauté until translucent, about 5 minutes.
  3. Add 2 cups of chopped chanterelle mushrooms and cook until tender, approximately 5-7 minutes.
  4. Stir in 1 teaspoon of dried thyme and sauté for an additional minute.
  5. Add 1 cup of wild rice and stir to coat with the vegetable mixture.
  6. Pour in 6 cups of vegetable broth and bring to a boil.
  7. Reduce heat to low, cover, and let it simmer for 45 minutes or until the wild rice is tender.
  8. In a blender, blend 1 cup of soaked cashews with 1/2 cup of water until smooth.
  9. Stir the cashew cream into the soup and season with salt and pepper to taste.
  10. Serve hot, garnished with fresh herbs.
