Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon smoked paprika
  • 1 can (400g) diced tomatoes
  • 1 can (400g) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Saffron rice (to serve)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent.
  2. Stir in minced garlic, tomato paste, and smoked paprika, cooking for an additional minute.
  3. Add canned tomatoes and chickpeas to the pot, mixing well.
  4. Pour in vegetable broth and bring to a simmer. Let it cook for about 15-20 minutes.
  5. While the stew simmers, prepare saffron rice according to package directions.
