Ingredients

  • 200 grams rice noodles
  • 400 ml coconut milk
  • 500 ml vegetable broth
  • 3 tablespoons red curry paste
  • 200 grams firm tofu, cubed
  • 100 grams bamboo shoots, drained
  • Fresh basil leaves
  • 1 lime, juiced
  • Salt, to taste
  • Chili slices, for garnish

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Add red curry paste and sauté for 1-2 minutes until fragrant.
  2. Pour in the coconut milk and broth, stirring to combine.
  3. Add bamboo shoots and bring the soup to a gentle simmer.
  4. On a separate pot, cook rice noodles according to package directions. Drain and set aside.
  5. In the simmering soup, add cubes of tofu and continue to cook for 5-7 minutes.
  6. Stir in fresh basil and lime juice just before serving.
