Ingredients

  • 400g hominy
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 poblanos, diced
  • 300g tomatillos, diced
  • 300g jackfruit, shredded
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Salt to taste
  • 1 liter vegetable broth
  • Fresh radishes, cilantro, and avocado for garnish
