Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1 can (400g) crushed tomatoes
  • 1 cup dried apricots, chopped
  • 2 cups fresh spinach
  • ¼ cup almonds, toasted and sliced
  • Fresh cilantro for garnish

Instructions

  1. Start by heating olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, grated ginger, and cook for another 2 minutes.
  4. Add diced carrots, zucchini, and bell peppers; sauté for 5 minutes.
  5. Mix in spices: cumin, coriander, cinnamon, and turmeric. Cook for 1-2 minutes until fragrant.
  6. Pour in vegetable broth and crushed tomatoes; bring to a boil.
  7. Add chopped apricots and cook on low heat for 20 minutes.
  8. Fold in spinach and cook for an additional 5 minutes until wilted.
