Hearty Vegan Lentil Stew Recipe

Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse 1 cup of lentils under cold water and set aside.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add 1 chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in 2 minced garlic cloves and cook for another minute.
  5. Add 2 chopped carrots and cook for 5 minutes, stirring occasionally.
  6. Pour in 4 cups of vegetable broth and bring to a boil.
  7. Stir in the rinsed lentils, 1 teaspoon of cumin, 1 teaspoon of paprika, salt, and pepper to taste.
  8. Reduce heat and let simmer for 30-35 minutes, or until lentils are tender.
  9. Garnish with fresh parsley before serving.
