Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (400g) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 4 cups kale, chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.
  3. Stir in 1 can (400g) of drained and rinsed cannellini beans.
  4. Add 4 cups of vegetable broth and bring to a simmer.
  5. Mix in 4 cups of chopped kale and cook until wilted, about 5-7 minutes.
  6. Season with salt, pepper, and optional red pepper flakes to taste.
