Ingredients

  • 400 grams cooked chickpeas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 tablespoon harissa paste
  • 1 liter vegetable broth
  • 4 eggs for poaching
  • 250 grams canned tuna, drained
  • Crusty bread, for serving
  • Salt and pepper, to taste
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. In a pot, heat olive oil over medium heat and add chopped onions. Sauté until translucent.
  2. Add minced garlic, cumin, and harissa; stir well for 1 minute.
  3. Pour in vegetable broth and add cooked chickpeas; bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. In a separate pot, poach eggs in simmering water.
  6. Season the soup with salt and pepper to taste. Serve hot in bowls.
  7. Top each bowl with a poached egg, chunks of tuna, and crusty bread pieces.
  8. Garnish with fresh herbs before serving.
