Hearty Tomato & Red Lentil Protein Soup

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 400g canned diced tomatoes
  • 200g red lentils
  • 1L vegetable broth
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: fresh herbs, chili flakes

Instructions

  1. In a pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Stir in diced tomatoes, followed by red lentils, vegetable broth, and seasonings.
  3. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until lentils are tender.
  4. Use an immersion blender to purée the soup until smooth, or transfer to a blender in batches.
