Creamy Thai Peanut & Vegetable Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup broccoli florets
  • 400 ml coconut milk
  • 400 ml vegetable broth
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • Juice of 1 lime
  • Salt and pepper to taste
  • Crushed peanuts for garnish
  • Fresh basil leaves for garnish

Instructions

  1. Begin by heating a medium-sized pot over medium heat and add 1 tablespoon of oil.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Introduce chopped bell peppers and broccoli, cooking for about 5 minutes.
  4. Pour in 400 ml of coconut milk and 400 ml of vegetable broth. Stir to combine.
  5. Add 3 tablespoons of peanut butter, mixing until smooth.
  6. Season with soy sauce, lime juice, salt, and pepper to taste.
  7. Simmer the soup for about 10-15 minutes, allowing flavors to meld.
