Ingredients

  • 400 grams tofu
  • 4 cups water
  • 1 stalk lemongrass, chopped
  • 50 grams galangal, sliced
  • 400 milliliters coconut milk
  • 1 cup fresh Thai basil
  • Salt to taste
  • Chili for garnish (optional)

Instructions

  1. Start by preparing the ingredients: slice the tofu into cubes, chop the lemongrass, and slice the galangal.
  2. In a pot, bring 4 cups of water to a boil.
  3. Add the chopped lemongrass and galangal to the boiling water. Let it simmer for 10 minutes to release the flavors.
  4. Stir in the coconut milk and allow it to heat through.
  5. Add the tofu cubes to the pot and simmer for an additional 5 minutes.
  6. In the last few minutes, add the fresh Thai basil and any other herbs as desired.
  7. Taste and adjust seasoning by adding salt or a dash of chili for heat.
  8. Serve hot, garnished with additional basil leaves.
