Ingredients

  • 500g beef, cubed
  • 2 ripe plantains, peeled and cubed
  • 400ml coconut milk
  • 2 medium tomatoes, chopped
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon oil
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh herbs for garnish

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat.
  2. Add diced onions and sauté until translucent.
  3. Add minced garlic and ginger; cook for 1-2 minutes until fragrant.
