Ingredients

  • 500g ground beef
  • 1 can (400g) black beans, drained
  • 1 can (400g) kidney beans, drained
  • 1 can (400g) diced tomatoes
  • 300g corn, drained
  • 1 medium bell pepper, diced
  • ½ onion, diced
  • 2 tablespoons taco seasoning
  • 2 cups beef broth
  • Shredded cheese for topping
  • Tortilla chips for serving
  • Jalapeños, diced, for garnish
  • Sour cream for topping
  • Cilantro for garnish

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned.
  2. Drain the excess fat and add diced bell peppers and onions; sauté until tender.
  3. Add the taco seasoning and mix well to coat the meat and vegetables.
  4. Stir in the diced tomatoes, black beans, kidney beans, and corn.
  5. Add 2 cups of beef broth and bring the mixture to a boil.
  6. Reduce heat and let it simmer for 15-20 minutes to blend the flavors.
