Ingredients

  • 500g sweet potatoes
  • 200g kale
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • 1 tablespoon chili powder
  • 200g peanut butter
  • 750ml vegetable broth
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions

  1. Peel and cube the sweet potatoes into bite-sized pieces.
  2. Wash and chop the kale into smaller pieces, removing the tough stems.
  3. In a large pot, heat a tablespoon of oil over medium heat and sauté chopped onions until translucent.
  4. Add minced garlic and ginger, cooking until fragrant.
