Ingredients

  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • Salt to taste
  • Black pepper to taste
  • 1 cup fresh basil leaves
  • Basil oil for garnish (optional)
  • Additional zucchini slices for garnish

Instructions

  1. Begin by washing and slicing the zucchini into thin rounds, reserving a few for garnish.
  2. In a large pot, heat olive oil over medium heat, then add the sliced zucchini and sauté for 5-7 minutes until softened.
  3. Add vegetable broth, salt, and pepper to the pot, bringing the mixture to a simmer.
