Ingredients

  • 4 medium ripe tomatoes
  • 2 cups watermelon, cubed
  • 1 small cucumber, peeled and chopped
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • Salt, to taste
  • Pepper, to taste
  • Fresh mint leaves, for garnish

Instructions

  1. Begin by chopping the tomatoes and watermelon into small cubes.
  2. Place the chopped tomatoes and watermelon into a blender.
  3. Add a small cucumber (peeled and chopped) and a handful of fresh mint leaves.
  4. Pour in 1 tablespoon of olive oil and 2 tablespoons of red wine vinegar.
  5. Season with salt and pepper to taste.
