Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced sun-ripened tomatoes (fresh or canned)
  • 4 cups vegetable broth
  • 1 cup orzo pasta
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Start by heating a tablespoon of olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until they become translucent, about 5 minutes.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
