Ingredients

  • 1 kg beef chuck, cut into chunks
  • 2 tbsp olive oil
  • 2 large onions, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 500 ml Guinness stout
  • 750 ml beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 tbsp Worcestershire sauce
  • 500 g potatoes, diced
  • Salt and pepper to taste

Instructions

  1. Start by cutting beef into 2-inch chunks and seasoning with salt and pepper.
  2. In a large pot, heat olive oil over medium-high heat and sear the beef until browned on all sides.
  3. Remove beef from the pot and set aside. Add chopped onions, carrots, and celery to the pot, cooking until softened.
  4. Stir in minced garlic until fragrant, about 1 minute.
  5. Return beef to the pot and add the Guinness ale, scraping the bottom to deglaze.
  6. Add beef broth, bay leaves, thyme, and Worcestershire sauce. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, until beef is tender.
  8. In the last 30 minutes, add diced potatoes and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh herbs.
