Spring Ramp & Potato Vichyssoise

Ingredients

  • 300g wild ramps
  • 500g Yukon gold potatoes
  • 1L vegetable broth
  • 250ml heavy cream
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash and clean the wild ramps, removing the roots and dark green leaves. Slice the whites into thin pieces.
  2. Peel and dice the Yukon gold potatoes into small cubes.
  3. In a large pot, melt 2 tablespoons of butter over medium heat. Add the ramp whites and cook until softened, about 3 minutes.
  4. Add the diced potatoes to the pot; stir to combine. Cook for another 5 minutes.
  5. Pour in the vegetable broth, ensuring the potatoes are covered. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  6. Remove from heat and let the mixture cool slightly.
  7. Transfer the soup to a blender and add the ramp greens. Blend until smooth.
  8. Return the blended mixture to the pot; stir in the heavy cream, salt, and pepper. Adjust seasoning as needed.
  9. Chill the soup in the refrigerator for at least 2 hours before serving.
  10. Garnish with fried potato slices and chive blossoms before serving.
