Ingredients

  • 500 grams fresh peas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 750 milliliters vegetable broth
  • handful of fresh mint leaves
  • 100 milliliters coconut cream
  • salt and pepper to taste

Instructions

  1. Begin by rinsing 500 grams of fresh peas under cold water and set aside.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat.
  3. Add 1 chopped onion and sauté for 5 minutes until soft and translucent.
  4. Stir in 2 minced garlic cloves and cook for another minute until fragrant.
  5. Add the peas to the pot along with 750 milliliters of vegetable broth.
  6. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  7. Add a handful of fresh mint leaves and blend until smooth using an immersion blender.
