Refreshing Spring Lemon & Dill Chicken Soup

Ingredients

  • 2 chicken breasts (about 500g)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (about 1L)
  • Juice and zest of 1 lemon
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • Lemon slices for garnish

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Incorporate minced garlic and cook for another minute.
  4. Add chicken breasts to the pot and cover with 4 cups of chicken broth.
  5. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
