Spring Lemon Asparagus & Herb Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 300 grams asparagus, chopped
  • 750 milliliters vegetable broth
  • 20 grams fresh dill
  • 20 grams fresh parsley
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add chopped onions and garlic; sauté until translucent.
  3. Add chopped asparagus and sauté for 5 minutes until slightly tender.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 10 minutes until asparagus is tender.
  6. Remove from heat and blend until smooth using an immersion blender.
  7. Stir in fresh dill, parsley, and lemon juice. Season with salt and pepper.
  8. Serve warm, garnished with lemon slices and a sprig of dill.
