Ingredients

  • 500g fresh asparagus
  • 300g fresh peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1L vegetable stock
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • A handful of fresh mint leaves

Instructions

  1. Start by washing and trimming the asparagus and then cut it into small pieces.
  2. In a large pot, heat olive oil over medium heat and add the chopped onions, sautéing until translucent.
  3. Add the garlic and cook for another minute until fragrant.
  4. Stir in the asparagus pieces and cover the pot, cooking for about 5 minutes until the asparagus is slightly tender.
  5. Add the peas and vegetable stock to the pot, bringing the mixture to a boil.
  6. Reduce heat and let it simmer for 10 minutes until all vegetables are tender.
  7. Remove from heat and blend the soup using an immersion blender until smooth.
  8. Stir in fresh mint leaves and season with salt and pepper to taste.
  9. Serve warm, garnished with a few whole peas and mint leaves on top.
