Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons harissa paste
  • 1 can chickpeas (400g), drained and rinsed
  • 4 cups vegetable broth
  • 1 preserved lemon, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in 3 cloves minced garlic and cook for another minute.
  4. Add 2 tablespoons of harissa paste, stirring to combine.
