Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) black beans, drained and rinsed
  • 1 can (400g) corn, drained
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Avocado slices, for garnish
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, bell pepper, and garlic, sautéing until soft.
  2. Add canned tomatoes, black beans, corn, vegetable broth, cumin, chili powder, salt, and pepper. Stir well to combine.
