Spiced Mulled Apple & Carrot Soup

Ingredients

  • 2 large carrots
  • 2 apples
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 star anise pods
  • 4 cups vegetable broth
  • 100ml coconut milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by peeling and chopping 2 large carrots and 2 apples into small pieces.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  3. Add the chopped carrots and apples to the pot, stirring occasionally for about 5 minutes.
  4. Add in 1 teaspoon of cinnamon, ½ teaspoon of nutmeg, and 2 star anise pods.
  5. Pour in 4 cups of vegetable broth and bring to a boil.
  6. Reduce heat and let simmer for 20-25 minutes until the carrots are tender.
  7. Remove the pot from the heat and allow it to cool slightly.
  8. Use an immersion blender to puree the soup until smooth.
  9. Return to the heat and stir in 100ml of coconut milk for creaminess.
  10. Season with salt and pepper to taste before serving.
