Ingredients

  • 500 grams carrots
  • 1 tablespoon olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander seeds
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Fresh chopped coriander

Instructions

  1. Begin by peeling and chopping 500 grams of carrots into small pieces.
  2. Heat a tablespoon of olive oil in a large pot over medium heat.
  3. Add the chopped carrots and sauté for about 5 minutes until they start to soften.
  4. Include one chopped onion and two minced garlic cloves, cooking for another 5 minutes until the onion becomes translucent.
  5. Stir in one teaspoon of ground cumin and one teaspoon of coriander seeds, cooking for an additional minute to release their flavors.
  6. Add 1 liter of vegetable broth and bring the mixture to a boil.
  7. Reduce the heat and let it simmer for about 20 minutes until the carrots are tender.
  8. Use an immersion blender to puree the soup until it reaches a smooth consistency.
  9. Season with salt, pepper, and a handful of fresh chopped coriander to taste.
  10. Serve hot, garnished with a sprinkle of cumin seeds and fresh coriander.
