Ingredients

  • 200 grams lentils
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 400 grams crushed tomatoes
  • 750 milliliters vegetable broth
  • 1 tablespoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by rinsing the lentils under cold water until the water runs clear.
  2. In a large pot, heat a tablespoon of olive oil over medium heat.
  3. Add diced onions and sauté until translucent, about 5 minutes.
