Ingredients

  • 500 grams smoked brisket, diced
  • 2 cans (400 grams each) pinto beans, drained
  • 400 grams diced tomatoes
  • 2-3 chipotle peppers in adobo sauce
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 500 ml beef broth
  • 2 tablespoons BBQ spice mix
  • Salt and pepper to taste
  • Garnishes: shredded cheese, cilantro, jalapeños

Instructions

  1. In a large pot, heat some oil over medium heat and sauté chopped onions and garlic until softened.
  2. Stir in diced smoked brisket and cook for about 5 minutes until slightly caramelized.
  3. Add in pinto beans, diced tomatoes, and chipotle peppers to the pot.
  4. Pour in beef broth and add your favorite BBQ spices, stirring well to combine.
  5. Bring the mixture to a simmer, then reduce heat and let it cook for at least 30 minutes.
  6. Taste and adjust seasoning, adding salt and pepper as needed.
