Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups shredded smoked turkey
  • 4 cups smoked turkey broth
  • 1 can (400g) navy beans, drained
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add chopped onions and garlic, sautéing until fragrant.
