Ingredients

  • 500g chicken thighs, boneless
  • 200g sweet potatoes, peeled and diced
  • 200g tomatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 4 cups chicken broth
  • 100g peanut butter
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Optional spices (cayenne, paprika)
