Ingredients

  • 500g chicken thighs
  • 3 large leeks, chopped
  • 1 liter chicken stock
  • 150g prunes, pitted
  • 1 tablespoon oil
  • 2 sprigs of thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Add chopped leeks and sauté until softened.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in vegetable stock and bring to a gentle boil.
  4. Add prunes, thyme, bay leaves, and season with salt and pepper.
  5. Simmer the soup for 30-40 minutes, or until the chicken is fully cooked.
  6. Remove the chicken, shred it, and add it back to the pot.
  7. Serve hot, garnished with chopped parsley for freshness.
