Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 250g sausage (sliced)
  • 400g diced tomatoes (canned)
  • 1 liter vegetable broth
  • 250g rigatoni pasta
  • 150g kale (chopped)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté chopped garlic until fragrant.
  2. Add sliced sausage and cook until browned, about 5-7 minutes.
