Rustic Pork and Cabbage Stew

Ingredients

  • 1 kg pork shoulder
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups cabbage, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme (optional)
  • Salt and pepper to taste

Instructions

  1. Begin by seasoning 1 kg of pork shoulder with salt and pepper. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Brown the pork on all sides for about 5-7 minutes.
  2. Remove the pork and set it aside. In the same pot, add 1 chopped onion and 2 minced garlic cloves. Sauté until fragrant and soft, about 3-4 minutes.
  3. Add 4 cups of chopped cabbage, 2 sliced carrots, and 2 diced potatoes to the pot, stirring well to mix.
  4. Return the browned pork to the pot and add 6 cups of chicken broth. Bring it to a boil, then reduce to a simmer.
  5. Cover and let the stew simmer for 1.5 to 2 hours or until the pork is tender. Shred the pork using two forks and return it to the pot.
  6. If desired, stir in 1 teaspoon of dried thyme and adjust seasoning as needed. Allow to simmer for an additional 10 minutes.
