Ingredients

  • 1 kg ripe tomatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 500 ml vegetable broth
  • 200 ml heavy cream
  • Fresh basil, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash and halve the ripe tomatoes, placing them cut-side up on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and chopped garlic.
  4. Roast the tomatoes in the oven for 25-30 minutes, until they are lightly charred and softened.
  5. Remove the tomatoes from the oven and let them cool slightly.
  6. In a blender, add the roasted tomatoes, vegetable broth, and cream.
  7. Blend until smooth, adjusting the consistency with extra broth if needed.
  8. Pour the mixture into a pot and heat it on medium-low for 5-10 minutes.
  9. Stir in chopped fresh basil and adjust seasoning to taste.
