Roasted Garlic & White Cheddar Soup

Ingredients

  • 2 whole garlic bulbs
  • 1 tablespoon unsalted butter
  • 1 large onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp white cheddar cheese, shredded
  • Salt and pepper to taste
  • 4 cups cubed bread (for croutons)
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (thyme or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap whole garlic bulbs in aluminum foil and roast for 30-35 minutes until soft.
  3. In a pot, melt butter over medium heat. Add chopped onion and cook until translucent.
  4. Once garlic is roasted, squeeze cloves out and add to the pot with onions.
  5. Pour in vegetable broth and bring to a simmer.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in heavy cream and white cheddar cheese until melted and combined.
  8. Add salt and pepper to taste.
  9. For croutons, toss cubed bread with olive oil and herbs, then bake at 375°F (190°C) until golden.
  10. Serve the soup topped with croutons and additional herbs if desired.
