Creamy Roasted Garlic & Potato Soup Recipe

Ingredients

  • 1 bulb of garlic
  • 500g potatoes
  • 750ml vegetable broth
  • 100ml cream (or milk)
  • Salt to taste
  • Pepper to taste
  • Chopped chives for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wrap the garlic bulbs in aluminum foil and roast in the oven for 30-35 minutes until golden brown and soft.
  3. While the garlic is roasting, peel and chop the potatoes into small pieces.
  4. In a large pot, add the chopped potatoes and cover with vegetable broth. Bring to a boil, then reduce the heat and let simmer for 15-20 minutes or until the potatoes are tender.
  5. Once the garlic is roasted, squeeze the cloves out of their skins into a bowl.
  6. Add the roasted garlic and a splash of cream (or milk) to the potatoes.
  7. Using an immersion blender or a regular blender, puree the mixture until smooth and creamy.
  8. Return the pureed soup to the pot, season with salt and pepper, and heat through.
  9. Serve hot, garnished with chopped chives and additional roasted garlic if desired.
