Silky Roasted Cauliflower Soup with Garlic

Ingredients

  • 1 medium head of cauliflower (about 600g)
  • 4 cloves of garlic
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 4 cups vegetable broth (1 liter)
  • Optional: 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the cauliflower into florets and place them on a baking sheet.
  3. Toss the cauliflower with olive oil, salt, and pepper.
  4. Add whole garlic cloves to the baking sheet.
  5. Roast the cauliflower and garlic in the oven for 25-30 minutes or until golden brown and tender.
  6. Transfer the roasted cauliflower and garlic to a blender.
  7. Add vegetable broth to the blender and blend until smooth.
  8. Pour the blended soup into a pot over medium heat and add a splash of cream if desired.
  9. Season with additional salt and pepper to taste.
  10. Serve hot, garnished with roasted cauliflower pieces and herbs if desired.
