Roasted Brussels Sprout & Apple Soup

Ingredients

  • 500g Brussels sprouts
  • 2 medium apples
  • 2 tablespoons olive oil
  • 500ml vegetable broth
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper, to taste
  • Chopped nuts for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim and halve the Brussels sprouts, then toss with olive oil, salt, and pepper on a baking sheet.
  3. Roast the Brussels sprouts for 20-25 minutes, until golden brown and caramelized.
  4. While the sprouts are roasting, peel, core, and chop the apples.
  5. In a large pot, add the chopped apples and enough vegetable broth to cover them.
  6. Add in warming spices like cinnamon and nutmeg, and simmer until the apples soften, about 10 minutes.
  7. Once the Brussels sprouts are done, remove them from the oven and add half to the pot with the softened apples.
  8. Using an immersion blender, blend the soup until smooth. If you prefer a chunky texture, blend just until combined.
  9. Taste and adjust seasoning, adding more salt, pepper, or spices if desired.
  10. Serve warm with the remaining roasted Brussels sprouts on top for garnish.
