Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 cup diced tomatoes
  • 1 cup vegetable broth
  • 1 cup water
  • 1 cup quinoa, rinsed
  • 1 cup white beans, rinsed
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (e.g., thyme, parsley)

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add 1 diced onion and sauté until translucent, about 5 minutes.
  3. Add 2 minced garlic cloves and cook for an additional minute.
