Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 400g chicken breast, diced
  • 400g canned chickpeas, rinsed
  • 100g quinoa, rinsed
  • 1 liter vegetable broth
  • 200g kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add chopped onions, stirring until translucent.
  2. Add minced garlic, diced carrots, and celery; cook until softened.
  3. Incorporate diced chicken breast and cook until browned.
  4. Stir in chickpeas, quinoa, and vegetable broth; bring to a boil.
