Ingredients

  • 1.5 kg pork shoulder
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1.5 kg hominy, drained
  • 4 dried guajillo chilies
  • 4 dried ancho chilies
  • 2 large tomatoes, diced
  • Salt to taste
  • 1 tsp cumin
  • 1 tsp oregano
  • Cabbage, shredded for garnishing
  • Radishes, sliced for garnishing
  • Lime wedges for serving
  • Cheese, shredded for garnishing

Instructions

  1. In a large pot, add 1.5 kg of pork shoulder, cover with water, and bring to a boil. Reduce heat and simmer for 1.5 hours.
  2. Remove the pork, shred it, and set aside.
  3. In the same pot, add chopped onion, minced garlic, and diced tomatoes. Cook until onions are translucent.
  4. Soak 4 dried guajillo and 4 dried ancho chilies in hot water for 30 minutes, then blend until smooth.
  5. Add the chili sauce to the pot, along with 1.5 kg of hominy, and shredded pork.
  6. Season with salt, cumin, and oregano. Simmer for another 30 minutes.
  7. Serve hot, garnished with shredded cabbage, radishes, lime wedges, and cheese.
  8. Customize with your choice of toppings like avocado or jalapeños for varying flavor.
