Hearty Pork & Lentil Rustic Stew

Ingredients

  • 500g pork belly, cubed
  • 200g lentils, rinsed
  • 2 medium onions, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 400g diced tomatoes (canned)
  • 1 liter vegetable broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Start by heating a large pot over medium heat and add cubed pork belly. Sauté until browned.
  2. Add chopped onions, carrots, and celery to the pot. Cook until vegetables soften, approximately 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add rinsed lentils, diced tomatoes, and broth to the pot. Bring to a boil.
  5. Season with salt, pepper, and herbs of choice, such as thyme or bay leaves.
  6. Reduce heat to low, cover, and simmer for 45 minutes, or until lentils are tender.
  7. Adjust seasoning as necessary and serve hot, garnished with fresh parsley.
