Ingredients

  • 1 kg pork shoulder, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 500 ml apple cider
  • 2 apples, cored and chopped
  • 1 sprig fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a large, oven-safe pot, heat olive oil over medium heat.
  3. Season the pork shoulder with salt and pepper, then sear it in the pot until browned on all sides.
  4. Add diced onions, carrots, and celery; sauté for about 5 minutes until softened.
  5. Pour in the apple cider and bring to a simmer.
  6. Add chopped apples, thyme, and bay leaf to the pot.
  7. Cover the pot and transfer it to the preheated oven.
  8. Braise for 2 to 2.5 hours, or until the pork is tender.
  9. Once cooked, remove from the oven, check seasoning, and adjust if necessary.
