Hearty Persian Ash Reshteh with Herbs

Ingredients

  • 200g lentils
  • 200g chickpeas (cooked)
  • 150g noodles (reshteh or any flat pasta)
  • 1 large onion (sliced)
  • 2 cloves garlic (minced)
  • 150g fresh parsley (chopped)
  • 100g fresh cilantro (chopped)
  • 100g fresh spinach (chopped)
  • Salt and pepper to taste
  • 3 tbsp oil (for frying onions)
  • Water or vegetable broth (enough to cover the ingredients)

Instructions

  1. In a large pot, heat some oil over medium heat, then add sliced onions and sauté until they are golden brown.
  2. Add chopped garlic and sauté for another minute until fragrant.
  3. Stir in the lentils and chickpeas, cooking them for 2-3 minutes.
  4. Add water or vegetable broth and bring to a boil, then reduce the heat and simmer for about 30 minutes.
  5. In the meantime, rinse the noodles under cold water to prevent sticking and set aside.
  6. Add the herbs (parsley, cilantro, and spinach) to the pot, and stir well.
  7. Introduce the noodles to the pot, allowing them to cook until tender, roughly 10 minutes.
  8. Season with salt, pepper, and any additional spices you prefer.
  9. Once done, remove from heat and let it sit for a few minutes before serving.
  10. Top with a drizzle of fried onions and mint for garnish.
