Ingredients

  • 1 carrot, diced
  • 1 potato, diced
  • 1 zucchini, diced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup matzo meal
  • 2 eggs
  • 1/4 cup water
  • Salt, to taste
  • Fresh basil and parsley, for garnish

Instructions

  1. Begin by preparing the vegetables. Dice 1 carrot, 1 potato, and 1 zucchini into small cubes.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the diced vegetables to the pot and sauté for about 5 minutes until they start to soften.
  4. Pour in 4 cups of vegetable broth and bring the mixture to a boil.
  5. Reduce the heat to low and let the soup simmer for 15 minutes.
  6. In a mixing bowl, combine 1 cup of matzo meal, 2 eggs, 1/4 cup of water, and a pinch of salt. Mix until a dough forms.
  7. Form small dumplings from the matzo dough and carefully drop them into the simmering soup.
