Ingredients

  • 500 grams ground beef
  • 100 grams breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 medium potatoes, diced
  • 2 carrots, sliced
  • 1 liter beef broth
  • 1 bay leaf

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, salt, and pepper. Mix until well combined.
  2. Roll the mixture into meatballs, about 1-2 inches in diameter.
  3. In a large pot, heat olive oil over medium heat and brown the meatballs on all sides. Remove them and set aside.
  4. In the same pot, add chopped onions, garlic, potatoes, and carrots. Sauté until onions are translucent.
  5. Return the meatballs to the pot. Pour in beef broth and add the bay leaf. Bring to a boil.
  6. Reduce heat and let it simmer for 30-40 minutes until the vegetables are tender and the meatballs are cooked through.
  7. Season with salt and pepper to taste. Remove the bay leaf before serving.
  8. Serve the stew hot, garnished with fresh herbs if desired.
