Ingredients

  • 4 slices bacon
  • 1 onion, chopped
  • 2 potatoes, diced
  • 2 cups vegetable broth
  • 1 cup water
  • 1 cup clams, chopped
  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Begin by cooking 4 slices of bacon in a large pot over medium heat until crispy. Remove and crumble, leaving the drippings in the pot.
  2. Add 1 chopped onion to the pot and sauté until translucent, about 5 minutes.
  3. Stir in 2 diced potatoes and cook for another 5 minutes, stirring occasionally.
  4. Pour in 2 cups of vegetable broth and 1 cup of water. Bring to a simmer and cook until the potatoes are fork-tender, about 15 minutes.
  5. Add 1 cup of chopped clams (canned or fresh), 1 cup of heavy cream, and season with salt and pepper to taste. Cook for an additional 5 minutes.
  6. Serve the chowder hot, garnished with the crumbled bacon and crackers on the side.
